Any other aged raw basmati rice should work the same way. The same recipe works with 1.5 & 2 cups of rice. If you use 1.5 cups rice then you will not need 2 cups water to blend. For aroma you may add 2 to 3 tbsps of chiroti rava or fine semolina to the fermented batter just before you make the masala dosas.
Update on Rice: These days I am able to make great masala dosas with aged raw basmati rice too. I use Lal Quilla basmati rice (old malai). Any other aged raw basmati rice should work the same way. Rice is ground to a fine semolina texture which gives the extra crisp texture to the dosa. However you may soak and blend them together if you have a large jar & high speed blender. What is the ratio of rice: dal? For masala dosa recipe, normally 4:1 ratio is followed since a higher amount of chana dal is used.
Prepare Dosa Batter:Soak rice and urad dal in separate bowls for 4-6 hours. Strain. Process rice and urad dal mixture in commercial grinder or food processor.
