1. If you have links of Italian sausage, you can cut them into 1-inch pieces, remove the casings, and use them as small meatballs. You can break the links up into ground sausage and use it that way. Or just use Italian ground sausage.
2. Chop a medium onion and add until the meat is browned and onion slightly brown. It is ok for the meat not to be totally cooked at this point. Add 4 to 5 cloves crushed garlic and let "bloom" for 30 seconds. Remove from heat.
3. Add 2 teaspoons dried oregano, 2 teaspoons dried basil, 1 teaspoon salt, 1/2 teaspoon pepper, 1/2 teaspoon red pepper flakes (optional), 28 oz crushed tomatoes, 6 oz tomato paste, and 6 oz water, and 14 1/2 oz diced tomatoes.
4. Place back on medium heat until light boil.

1. These are the tomatoes I used. You can use regular diced or petite. Some people don’t like having tomato chunks. If you are one of those people, blend in a blender before using.
2. Place water in a medium sauce pan and place on high to bring to a boil (this is for your pasta). Pick the pan you are using for the sauce. I like a big non-stick pan. Spray your non-stick pan with non-stick spray.
3. I happen to use a Le Creuset pan that I’ve had for almost 10 years. It’s one of my favorite kitchen items ever. Turn the heat to medium high.
4. 2.Prepare your sausage for the pan. If you like spicy, buy hot Italian sausage. Not so spicy— Mild Italian sausage.
