These low carb kolacky are my version of the traditional Christmas cookie from Poland! They're made from sweetened fathead dough, and are sugar free and keto friendly! Preheat the oven to 350F. How to Make Low Carb Rolls. Melt mozzarella and cream cheese together. Add the cheese to a food processor and process with an egg until completely combined. Add the dry ingredients and process again. Freeze for 15 minutes, shape with oiled hands, place on a lined baking sheet and bake. It couldn’t be easier.
Kolache, or nut rolls, have been a Christmas and Easter favorite in my family for at least 5 generations. My great-grandmother brought the basic recipe with her from the former Czechoslovakia, now the Slovak Republic, in the early 1900s.
