2. Place 6 of the eggs in a medium saucepan, then cover them with water by 1-inch above the eggs. Bring to a boil over high heat, cover the pot, and remove from heat. Let sit for 3 minutes, Transfer the eggs to the ice water. let cool for 5 minutes, then gently peel the eggs.
3. In a medium bowl, mix together the sausage, mustard, and parsley. Divide the sausage mixture into 6 equal portions, about 3-1/2 oz each.
4. Thinly coat your palms with olive oil. Shape 1 portion of the sausage mixture into a ball, then flatten it in your hand into an oval, about 2-1/2 by 4 1/2-inches and about 1/3-inch thick. Place an egg in the middle of the oval then wrap it around the egg. Pinch the meat edges together and smooth them so there are no gaps or bumps.
