You guys have been asking for low carb snack ideas so I wanted to share my recipe for keto tots that uses cauliflower instead of starchy potatoes. These cauliflower tots are full of flavor and are the perfect size for snacking.
Place the cauliflower tater tots on top and push them about half way down into the beef and cheese. Bake in the oven for 30 minutes, add the remaining ½ cup of cheese, and bake for 7-10 minutes more. Allow to cool for 20 minutes so the casserole does not fall apart, top with toppings and enjoy!
It’s very easy to make a tater tot casserole low carb. Just replace the tots with ones made from cauliflower and use keto approved veggies. I like to add green or poblano peppers to the garlic and onions, but you can also add some spinach or broccoli. That is a great way to sneak some veggies.
Each cauliflower tater tot only has 0.87 net grams of carbs, and you won’t even be able to tell that it’s not made of potatoes. Make sure to top he casserole with full fat shredded cheese, lower fat cheeses have more carbs, and bake in the oven.
