Prepare the ingredients: dice the onions and garlic, and measure the pasta, peas, and water. Grate the cheese. Heat the olive oil in a pan over medium to high heat. Once the oil is hot, add the garlic and onions and saute for a few minutes until they begin to soften. Reduce the heat to medium-low heat and stir in the peas.
Because the chicken is cooked quickly it keeps all its flavor and doesn’t dry out. Also, basil and tomato is really a match made in heaven, so adding them to this low-carb pasta dish is a great idea. Basil is easy to grow in pots in the kitchen so you could have a source of freshness to add to soups and sauces any time.
Prepare the pea pesto by blending the cooked peas with 1 Tbsp. olive oil, 1 Tbsp. vegetable stock and 1 Tbsp. grated Pecorino. Cook the pasta (we recommend orecchiette) in boiling salted water until al dente, then drain, setting aside some of the pasta cooking water.
Italian pasta and peas can also be served as a side dish with grilled chicken, or pork chops. Store leftovers in the refrigerator in an airtight container for up to two days.
