Both methods proceed from here together: Allow the butter to melt, then add in onion, shallot, and celery and sauté for 3 minutes. Add garlic and sautè for 30 seconds.
4. Add rice to pot, stir to coat in oil, then cook for 2 minutes, stirring constantly to toast the rice.
