1. Set the sauté function on high, heat the coconut oil for about one minute.

1. Measure sour cream to a small bowl and let come to room temperature while cooking. Chop onion, green bell pepper and carrots. Mix spices together in a small bowl. Prepare rice or noodles of choice to package directions
2. Turn your Instant Pot on using the sauté setting. When the display says HOT add in oil and stir to cover bottom. Add in the onion and green bell pepper and sauté for 4-5 minutes. Pour in the chicken broth and scrape the bottom of the pot to deglaze. Turn Instant Pot off.
3. Place chicken in pot as evenly as possible. Sprinkle the chicken with mixed spices. Then dump the tomatoes, then carrots on top of the chicken.
4. Cover and secure the lid making sure valve is set to sealing. Set the manual-pressure cook button to 12 minutes for unfrozen thighs or 15 minutes for frozen thighs. When the times up let the pot natural pressure release for 10 minutes and then turn the valve to vent. After venting remove the lid.

1. Turn Instant Pot to the sauté setting “more” or high. When HOT add in the butter. When butter is melted add in the onions and sauté for about 3-4 minutes. Then add garlic and sauté for another minute. Add in the chicken broth, garlic powder and pepper then stir and scrape bottom if needed.
2. You can cook pasta at the same time and in the same pot. Use a pan that is heat and pressure safe that fits inside your Instant Pot along with 3 cups of water and 10 ounces of egg noodles or any other pasta. Place the I.P. trivet on the top of the chicken. Then carefully place the pan on the trivet. Break up any pasta that would not be submerged below the water. Do not salt pasta water.
3. Cover the pot and lock the lid. Ensure valve is closed and set to sealing. Set the manual pressure cook button to 6 minutes. When complete let the pressure release naturally for 10 minutes and then release the valve to vent pressure.
4. While instant pot is natural releasing, warm the cream in a small bowl 30-45 seconds in the microwave. Whisk the corn starch vigorously into the cream until smooth.
