1. Heat bacon drippings in a cast-iron skillet over medium heat. Add the greens. Stir-fry, I suppose, since you are stirring and frying, for 1 to 4 minutes (depends on how tough the greens are) or until greens are limp, tender, and have greatly reduced in size. Pork fat is good because it helps cover the bitterness of greens while bringing out their great flavor.
2. At this point, you have a choice. Either serve them straight from the pan with a sprinkling of salt, or add 3 to 4 cups of water and salt to taste, and boil the greens 1 hour for extra tender, probably-won't-even-have-to-chew greens. If you don't have teeth, clearly you see which way to go here.

1. Make the dressing for the green beans by adding the mayo to a bowl along with the lemon juice, 1.5 teaspoons tamari, ½ teaspoon sesame oil, sambal, mustard, ¼ teaspoon salt, and a couple cracks of pepper. Mix well and check for seasoning, you may want more spice or lemon juice. Set aside.
2. For the green beans, pre-heat a large non-stick pan just below high heat for 2 minutes with 2 teaspoons of oil. Add the green beans and cook for 7-8 minutes, until blistered on outside, but still crunchy. Add the onions, garlic, pecans and cook for 1 minute. Turn the heat down to medium and add 1.5 tablespoons of tamari, ½ teaspoon of sesame oil, and a ¼ teaspoon of salt to the pan and cook for 30 seconds so the beans can steam. Remove from heat and transfer to a large bowl. Once the beans have cooled slightly add enough dressing to coat, and enjoy!
3. Green beans will keep in the fridge for 4-5 days, but can not be frozen.

1. Dice bacon and cook in the pot over medium heat until crispy, about 6 minutes. If using ham, add 1 tablespoon of bacon grease or oil to the pot and brown the ham. If using smoked sausage, slice or dice the sausage and brown in 1 tablespoon bacon grease or oil. If using smoked turkey, skip this step but add 1 tbsp of bacon grease or oil to the pot for the onions.
2. Wash and trim beans, chop the onions, and slice the garlic while the bacon is cooking. If you like crispy bacon, remove bacon now, otherwise leave it in the pot to cook with the beans.
3. Add the onions and bay leaf to the pot and saute until the onions have softened. Add the garlic and beans and add enough broth to just cover the beans. (If you like your beans with vinegar and a little sugar, add it now. I go by taste.)
4. Bring the pot up to a boil, then turn it down to a simmer and simmer the beans for 40 minutes up to 1 1/2 hours for a pound of beans. I like my beans more firm, so I cook for about 40 minutes or until the beans are tender when pierced with a fork. Traditional southern green beans are cooked for a long time!
