2. Refrigerate chicken in the marinade for at least 1 hour, up to 2 days, ideally turning the chicken to coat in marinade halfway through.
3. Preheat the oven to 425 degrees F (218 degrees C). Line one extra-large or two small baking sheets with parchment paper.
4. Arrange the chicken in a single layer on the lined baking sheet(s), mostly without touching each other. Bake for 18-20 minutes, until chicken is cooked through (165 degrees F measured using an instant read thermometer).

1. Preheat the oven to 375°F. Prepare small rimmed baking sheet by spraying lightly with non-stick spray.
2. Place the chicken thighs, skin side up, in pan. Season the thighs with salt and pepper. Bake the thighs until the skin is crispy and the juices run clear when the thighs are pierced with a fork, 30 minutes. Internal temperature should read 165°F on a instant read thermometer.
3. While the chicken roasts, combine the olive oil, honey, vinegar, and garlic in a small saucepan. Bring to a simmer over medium heat and simmer gently, stirring occasionally, until the sauce is thickened slightly, 5 to 7 minutes. Remove from the heat, and let stand for 5 minutes. Sauce will continue to thicken.
4. Once the chicken is done, baste each thigh with the glaze and serve warm with additional sauce and cooked rice, if desired.

4. Trim 2 inches off the ends of the broccolini stems and cut any thick stalks in half lengthwise. In a small bowl combine broccolini with olive oil, sun dried tomatoes, salt and pepper. Place around the chicken on the sheet pan. Bake for the last 15 minutes of the baking time, until the broccolini is crisp-tender.
