Total Time: 15 minsCategory: DessertCalories: 235 per serving1. Bring the heavy cream and almond milk to a simmer in a small pot over medium heat.
2. Place the dry ingredients (erythritol, cornstarch, and salt) into a medium heat proof bowl and whisk together. Add the egg yolks and whisk. Whisk in the whole eggs. Ready the sieve near the bowl. Sprinkle the gelatin over the tablespoon of water.
3. When the cream is hot and bubbling around the side of the pot, slowly pour it into the egg mixture whisking continuously until fully incorporated. Pour the mixture back into the pot and place over medium low heat. (Once you become familiar with making pudding you can do it over medium heat, adjusting up and down as needed.)
4. Continuously whisk the mixture for the next 5 minutes, until it begins to thicken all-at-once. Turn the heat down a tad and continue to whisk for 1-2 minutes. The mixture should very slowly simmer if whisking is stopped. Remove from heat and whisk for 1 minute more. Place the sieve over the bowl and pour the pudding through the sieve to catch any bits of egg that may have cooked.

2. Using a whisk, combine milk, sugar and cornstarch in a medium saucepan over medium heat on stovetop. Allow milk to scald (heat to the point when tiny bubbles form around edges of pan). Whisk occasionally to prevent cornstarch from clumping on bottom edges of pan.
3. Remove milk mixture from heat, preferably to a burner that's turned off.
4. Mix about 2 tablespoons of scalded milk mixture into eggs using whisk, then introduce eggs into milk mixture in a slow stream, whisking milk mixture constantly.

Total Time: 2 hrs 15 minsCategory: DessertCalories: 349 per serving1. Although this recipe is made quickly, allow time for soaking (to create a super-smooth nut milk). Larger nuts need to soak overnight. So plan one day in advance if you're using larger nuts. Seeds like hemp, pine nuts or nuts like cashews only require a short soaking time. Other nuts, like macadamia nuts, need an overnight soaking or a minimum of 6 hours.
2. Into a high-powered blender, add the following: water, soaked pine nuts or preferred nut/seed, (soaked as designated below in the Recipe Notes: How to Soak Nuts and Seeds), stevia and sea salt. Blend on medium-high speed for one full cycle, or about 50 seconds. This blend will create the best milk ever.
3. Pour 1 cup fresh seed or nut milk into a small saucepan, reserving the rest in the blender. Sprinkle gelatin over the surface, and allow it to bloom 1 minute. Heat over medium heat, stirring, for 2 minutes, until steam forms and the gelatin dissolves, but do not allow the water to simmer. Remove the saucepan from the heat, and allow to cool slightly, 10 minutes.
