1. In the bowl of a stand mixer with a bread hook, combine warmed water, sugar, and yeast. Let stand for 5-10 minutes until expanded and foamy.
2. Melt 2 TBSP butter and combine with lukewarm milk (microwave it for 30-60 seconds or let sit out while prepping the yeast). Add the milk mixture to the stand mixer, along with the lightly whisked egg, and stir to combine. Add salt and flour, continuing to mix until dough is formed. The dough will be slightly sticky to the touch, but if your finger pulls away covered in dough, add an additional 2-4 TBSP of flour to the dough (being careful to not add too much).
3. Lightly grease a large bowl and transfer the dough to it. Cover the bowl with a tea towel and let the dough rise in a warm area for 1 hour. To speed up the rising process, heat the oven to 200°F, turn it off once it's preheated, and set the bowl inside the oven to rise.
4. Once the dough has risen, dump onto a well-floured surface and knead for 2-3 minutes, adding additional flour as needed. Weigh the dough and divide weight evenly by 8 to determine the weight of each individual roll (if you don't have a scale, cut dough into 8 evenly sized sections). Roll into a ball and place around a greased cast iron skillet (or 10-inch circle pan). Cover with the tea towel again and let rise for another hour.

1. In a bowl, dissolve 1 teaspoon of sugar into 1/4 cup of warm water at 110°F-115°F. Using a thermometer is the most accurate way to determine the correct liquid temperature. If you don’t have a thermometer, the water should be warm but NOT hot to the touch. Stir in 2 1/4 teaspoons of dry yeast. Yeast should be at room temperature before using.
2. Within several minutes, the yeast will have absorbed enough liquid to activate and start to rise. After ten minutes, the yeast mixture should be bubbling and foamy and should have started to rise. If this is true, your yeast is very active. If your yeast is doing absolutely nothing, discard the yeast and buy fresh yeast.
3. In a stand mixer or large bowl, cream butter and sugar for 1 minute. Add eggs and milk and mix for 2 more minutes. Add in proofed yeast mixture.
4. Pour in flour and salt. Mix for 5-7 minutes. Watch for the dough to start to come off the sides of the bowl. Add 1-3 Tablespoons of flour, if needed.

1. In a 2-cup glass measuring cup, add the water, yeast and sugar, and stir together with a fork. Set aside to rise.
2. Add the flour and sea salt to the bowl of your stand mixer fitted with the dough hook attachment (use a large bowl and a wooden spoon if you don't have a stand mixer).
3. When the water, yeast and sugar mixture has risen up slightly and is nice and fluffy, add it to the mixing bowl along with the egg and melted butter.
4. Turn the mixer on low speed and mix until the dough comes together. Turn the speed up just slightly until the dough forms a very soft ball around the dough hook and clears the sides of the bowl. If the dough appears very sticky and too fluid, add the extra 1/4 cup flour.
