1. Line an 11x7-inch pan with well-greased wax or parchment paper. Set aside.
2. Melt the butter on low in a heavy saucepan. Stir in the sugar, syrup and water. Stirring constantly, use a candy thermometer and cook until the mixture reaches 305 degrees F.
3. Pour the hot candy onto the prepared pan. Spread the mixture to the edges. Allow to sit until the mixture is stable but still hot. Spread the melted chocolate chips over the top. Sprinkle nuts over the top of the chocolate and gently press in.
4. Allow the candy to cool and harden. Break into pieces and store in an airtight container.

1. Grease a 15-in. x 10-inch pan with 1 tablespoon butter and set aside. ( I use my silpat mat here for lining the pan and it works great.)
2. In a large pan, melt the remaining butter. Add the sugar, corn syrup and salt. And cook and stir over medium heat until a candy thermometer reads 295 degrees. This is hard-crack stage. Be careful doing this part because it is hot and you don't want to burn yourself.
3. Quickly, and I do mean quickly before it hardens, pour into 15 x10 inch pan.
4. Let stand at room temperature until completely cooled and hardened. This will take about 2 hrs.

1. Preheat oven to 350º. Line 8 x 8 inch pan with non-stick foil or regular foil sprayed with nonstick cooking spray. Set aside.
2. Melt butter in saucepan over medium heat and continue cooking, swirling pan occasionally, till it just turns brown and smells nutty. You do not want it to burn, so watch carefully.
3. Combine brown butter and brown sugar. Beat for a couple minutes till well combined, then add egg and beat till batter becomes smooth. Mix in vanilla. Mix in flour, salt and baking soda till just combined. Fold in Heath bar and chocolate chunks. Spread into prepared pan and smooth top. Bake for 20-25 minutes or till edges start to pull away from the sides of the pan.
4. Cool, then cut into bars to serve.
