2. In a medium-large pan over medium high heat, add the oil. Toss the veggies with the vinegar and garlic. When the oil is hot, saute the veggies until crisp tender - about 5-6 minutes. Salt and pepper to taste. Add the butter and serve
3. Preheat the oven to 400F. Combine all of the ingredients except for the butter onto a sheet pan and roast for 15-20 minutes. Remove from the oven, toss with the butter and serve.
