1. Bring a pot of water to a boil (large enough to submerge your head of cabbage).
2. Once boiling, add cored cabbage (1 head) and blanch for about 3 minutes, then use 2 tongs to remove each of the leaves. If they're difficult to remove, allow the leaves to blanch longer. Set blanched leaves aside on a plate as you cook remaining leaves. You'll need 8 leaves in total, so feel free to discard the center smaller leaves.
3. Optional: Once leaves are cool enough to handle, use a small knife to remove some of the core's thickness by dragging the blade over the top of the core.
4. Meanwhile, cook the bacon (8 slices) in a large skillet over medium-low heat.

1. In a large skillet sprayed with nonstick cooking spray, sauté potatoes for about 3-5 minutes and until they are softening. Chop chicken sausage and add it with onion and bell pepper to the skillet. Continue to cook for a minute or two and then add in spinach. Once veggies are tender and sausage is browned, add eggs, egg whites and seasonings.
2. Fill tortillas evenly with 1/4 of the egg mixture and any other toppings you prefer. Fold in the sides of the tortilla over the filling and roll, tucking in the edges as you go. (See video in this post for a visual.)
3. Spray cleaned skillet with cooking spray and set the heat to medium. When the skillet is hot, add the burritos, seam side down. Cook, covered, until the bottom of the burritos are golden brown, about 3 minutes. Flip the burritos over and continue cooking, covered, until golden, a few minutes more. Serve warm.
4. Make Ahead: The burritos may be assembled a few hours ahead of time, wrapped tightly in plastic wrap and refrigerated, before cooking. To reheat leftover burritos, wrap in foil and warm in a 350°F oven for about 15 minutes. (They won't be as crisp as they are fresh out of the pan, but they reheat well.)

These Healthy Low Carb Breakfast Burritos are an easy, homemade make-ahead breakfast idea to add to your meal prep menu! Stuffed with eggs, bacon, and cheese, they are delicious and freezer friendly! Grease a 9X13 casserole dish and preheat oven to 350°F.

The FAMOUS quick and easy 2-minute keto breakfast burrito recipe. Load em'up with your favourite fillings. Bacon, avocado, cheese and some leafy greens. Watch the quick video to see how easy these are to make and scroll below to see all the filling options (number 3 is my favourite).

How do you make low carb burritos with eggs?

In a low carb tortilla, spoon eggs down the middle follow with bacon and freshly shredded cheddar cheese. Roll low carb burritos and place seam side down in a casserole dish. (Reserve 1/4 cup of the cheddar cheese and some of the crumbled bacon to use as toppings for the burritos in the casserole dish before baking.)

Are burritos keto or low carb?

Regular burritos are not keto or low carb friendly; however, low carb burritos are an excellent alternative for those following a low carb lifestyle. They do contain wheat, so they would not be considered strict keto, but I eat them occasionally and stay in ketosis. There is no right or wrong way to make a breakfast burrito.
