1. Preheat oven to 350 degrees. In a skillet, brown ground beef with onions, peppers, and garlic then drain.
2. Add spices, Rotel Tomatoes, tomato sauce, and Bragg's Aminos then bring to a boil and simmer for 5 minutes uncovered.
3. Grease a casserole dish. I used a 2.5 qt oval baking dish (you can also use a 9 X 9 square cake pan). Pour ground beef mixture in a baking dish and top with shredded cheese.
4. Bake for 25 minutes then let rest for 5 minutes before serving.

3. In a large skillet, heat chicken broth and Neufchatel cheese over medium heat, whisking until cheese is melted and slightly foamy.
4. Add Parmesan cheese, diced tomatoes, basil, oregano, ricotta, and shredded squash; mix together.
