1. In a large heavy pot over medium high heat, heat the butter and saute the onion, celery, and pepper until the onion begins to be translucent, about 7 minutes. Add the ham, rice, and flour and stir for 3 minutes. Add one cup of the stock and stir to combine.
2. Add the remaining stock and the okra, tomatoes, peas, and pepper. Simmer for 20 minutes or until the rice is cooked. In the last ten minutes of cooking, stir in the chicken and dill weed. Serve soup, garnished with fresh chopped parsley.
3. Once you've sauteed the ingredients in step one, transfer the mixture to the crock of a slow cooker. Add the stock, okra, tomatoes, peas, and pepper. Cook on low for 6 to 8 hours or on high for 3 to 4. In the last half hour of cooking, stir in the chicken and dill. Serve with the fresh parsley.

1. Place the first 10 ingredients in a 12-16 quart stockpot and bring to a boil over high heat. Once boiling lower heat to med/low and simmer for 2 hours or until chicken just begins to fall off the bone.
2. Using two hands, remove chicken with long handle tongs and a large serving spoon onto a plate to cool. Debone chicken once cool enough to handle, cooling time is about 30 mins. In the meantime rinse rice and add to stockpot along with tomatoes and juice from can. Simmer until rice is tender, approximately 40 mins. Once rice is tender add deboned chicken and add okra. Bring back to a slow boil and simmer for about 10 minutes or desired tenderness of okra. Salt and Pepper to taste.
3. Once served sprinkle on gumbo filé to taste preference. This is an optional step.
