Sprinkle flour over vegetable mixture and mix well. Cook until golden brown, about 5 minutes. Pour in chicken stock, water, rice, okra, sausage, tomatoes, and hot sauce. Bring to a boil; reduce heat and simmer until sausage is heated through and vegetables are tender, about 5 minutes.
Add sliced onion and green bell pepper and stir with chicken until vegetables are soft. Add salt, cajun seasoning, gumbo filé and cayenne. Stir into chicken mix and continue to cook for a minute. Add the thinly sliced kielbasa, celery, okra and crushed tomatoes along with water and bone broth. Stir until well mixed.
Stir in the onion, bell pepper, and celery and cook for 5 minutes until vegetables are softened. Add the salt, cajun seasoning, cayenne, and cook for 2 minutes. After adding the crushed tomatoes and beef broth reduce heat to medium and cook for 5 minutes, add the Andouille sausage and butter.
Base – You can’t have gumbo without the “holy trinity” of Cajun cooking, celery, peppers, and onion. Some would argue that you can’t have gumbo without a roux either, but we’ve skipped it because wheat flour is a no-no if you want this dish to be Keto-friendly. Protein – Sausage and shrimp is a classic gumbo combination.
