DirectionsStep1Pre-heat a broiler.Step2If you are using the broiler in the oven, you will need a tray with a rack, or a tray covered with a piece of creased aluminium foil (note 3).Step3Place the fillets on the rack or the foil, skin side down without overlapping. Then place the tray below the heat. The distance between the heat and the fish should be about 3-5 cm/11⁄2-2”.Step4Cook for a couple of minutes (note 4) until the surface of the fillets become white and the tail starts browning.Step5Turn them over and cook further for a couple of minutes (note 4) or so until the skins start blistering with burnt patches.Step6Transfer to a plate with cucumber slices on the side.Step7Pre-heat the grill pan/BBQ over high heat. Reduce the heat to medium and place the fillets on the grill skin side up.Step8Cook for 1 minute or so (note 5) until edges of the fillets are cooked and become white.
