2. Heat the oil in large pot over a medium heat. Once hot, add the mustard seeds.
3. When the mustard seeds start to pop, add in the turmeric, cumin, curry powder and bay leaves. Stir for a couple of minutes until the spices become fragrant.
4. Add in the onion, ginger, garlic and chili. Stir so that the spice coats the onions and cook for 5 minutes until the onions start to soften.
