1. Preheat the oven to 350. Spray an 8x8 pan with cooking spray. It is helpful to line with parchment paper.
2. Put the crust ingredients in a medium bowl and whisk until combined. Press into the pan. Bake for 15-20 min until the crust is golden brown.
3. Meanwhile, combine butter, sweetener, and 2 tablespoons of the cream over medium heat. Stir until the sweetener is dissolved. Add the vanilla. Cook until it is a deep golden brown. As soon as it reached that deep color (right before burning) remove from the heat and immediately add the other 2 tablespoons of heavy cream. Stir until smooth. Add the salt and coconut.
4. Gently spread the coconut on top of the crust. Drizzle with chocolate. Let cool until the chocolate is firm. Cut into 16 pieces and enjoy!

1. Preheat oven to 350 *F.
2. Next make the caramel layer by blending the dates with water in a food processor. (Be sure to remove pits from dates before blending)
3. Note: You can reduce toasted coconut flakes to 3/4 cup as I usually end up with extra. But I like sprinkling any extra on other desserts and dishes. I find the easiest way to toast dried coconut flakes is in a small DRY saucepan over medium heat on the stove top. I keep a close eye on the coconut flakes, stirring them almost constantly, until nice and toasted. Immediately remove from heat and spoon toasted coconut flakes into a bowl to cool. (You can also toast them in the oven, but I find that when using the oven they don't toast as evenly, usually the flakes on the outer edge start to burn before the flakes in the middle have toasted. Just use the method you are most comfortable with.)

1. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar until light and fluffy.
2. Spread the coconut flakes onto a baking sheet lined with parchment paper. Bake the coconut for about 10 minutes in a 350ºF oven until toasted, stirring frequently to ensure even browning and so that it does not burn. (See Kelly's Notes.) Remove the toasted coconut from the oven and set it aside.
3. If you don't have a doughnut-shaped cookie cutter, you can use two cookies cutters (such as a circular 2-inch and a circular 1-inch) to form the ring shape. Alternately, you can use the caps to any dry spices to serve as cookie cutters.

1. Make the shortbread cookies according to the instructions here, except use a small cookie scoop to make them smaller and thinner (about 1/4 in (.6 cm) thick and 1.5 in (3.8 cm) diameter). You'll want to reduce the baking time by a couple of minutes since they are thinner (mine took 10 minutes). Cool completely.
2. Stir (or blend) together the peanut butter and powdered erythritol. (Adjust sweetener to taste if needed.) Spread a teaspoon of the mixture on top of each cookie. Place back onto the parchment lined baking sheet and freeze for at least 1-2 hours, until the peanut butter is completely solid.
3. Combine chocolate chips and coconut oil in a medium bowl. Heat in the microwave (or on the stove over very low heat), stirring every 15 seconds, until completely melted.
4. Dip each cookie into the chocolate using a fork, coating all sides. Shake off the excess, then place back onto the parchment lined baking sheet. (You can reheat the chocolate in the microwave if it begins to harden.) Repeat with all the cookies. Cool completely to allow the chocolate to solidify before serving.

2. Add in the diced cold butter and the vanilla. Pulse again until the mixture is not longer dry but resembles bread crumbs. Then add in the egg and pulse again until the mixture looks like a thick cookie dough.
3. Dump the dough out on a long piece of parchment paper. I use the rubber spatula to create a more rectangular shape to the dough. Roll the dough up into the parchment paper to for a log. Create a log that is 10" long and twist off the sides tightly so that the dough will take the shape of the parchment paper.
4. Place in the freezer for 45-50 minutes or until solid to the touch, If you plan on baking at a later time, keep in the fridge and then place in the freezer prior to the actual bake time.

1. Preheat oven to 325 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone mat and set aside
2. Place the coconut oil in a large bowl and microwave for one minute, or until melted. (You can do this without a microwave by melting the coconut oil on the stovetop and then transferring it to the bowl.) Add in the eythritol or sugar, mashed banana, and vanilla extract until incorporated. Stir in the flour and salt until completely combined, but do not over mix.
3. Roll the dough into 1 1/2-inch balls, flatten into cookie shapes, and place evenly apart on the prepared baking sheet. Using a small cookie cutter or the large end of a piping tip, cut the center out of the cookie. Bake at 325 degrees for about 12 minutes, or until firm and golden. Let cool on a wire.
4. Meanwhile, in a medium skillet, cook the erythritol over medium low heat until completely melted, stirring constantly as it burns very easily. Once melted, add in the shredded coconut and continue to cook and stir until golden. Stir in the almond milk until completely incorporated (it will sizzle- that’s good!).
