While the pasta is cooking, heat your olive oil in a large pan. Throw in your cherry tomatoes and cook for three minutes stirring constantly. Add your prawns, garlic, chilli, lemon zest, half of your lemon juice and the capers. Cook until prawns have turned a lovely orange colour.
Fry the tomatoes and prawns in the oil on a high heat for 1 minute. Add the chilli flakes, tomato paste and garlic paste and cook for 30 seconds further. Add the Chinese rice wine and sugar along with a generous pinch of salt and pepper. Cook for 2-3 minutes or until the prawns are cooked through.
A quick and easy recipe. Prawns are not cheap but they are tasty and with a low carb dish in mind I wanted something a little different from beef, lamb, poultry and pork. I will have salmon early next week and so I thought another seafood option for a quick and easy dinner would be a creamy garlic prawns dish.
Whizz the caulifower in a food processor until it resembles rice. Heat half the oil in a large pan over a medium-high heat and cook half each of the garlic, chilli and ginger for 1 minute. Stir in the prawns and cook for a further 3-4 minutes, or until cooked through.
