The first way to assemble to burrito is to layer the beans, meat, sour cream, hot sauce, lettuce, tomatoes, and cheese into the middle of an uncooked Libby's Keto Tortilla. Next, roll the tortilla into a burrito and place the burrito into the center of a warm skillet to cook for several seconds on all sides.
Place on a small cookie sheet. Repeat the egg process with your remaining 3 eggs so you have 4 burritos total. Transfer the burritos that are on the cookie sheet and place into the freezer for 2 hours or until the burritos are frozen. Take them out and wrap individually with wax paper and place in a zip lock bag.
These burrito wraps are not 100% keto-friendly because many who follow a strict keto diet avoid wheat; however, they ARE low carb! If you avoid grains on keto, this would be the perfect recipe to try for a “cheat day” without having carb overload. If you eat low-carb, you will love this low-carb burrito casserole.
Black beans, pinto beans, refried beans, chickpeas, or even lentils are all good options. Just make sure to drain any excess liquid before adding them to your burritos. And if beans aren't your thing, just leave them out. Whole grains: Some people love the idea of rice in their burritos and other fervently oppose it.
