3. Knead at medium speed for 2 minutes. The dough should clear the sides, but stick to the bottom. (If it is too sticky, add 1 tablespoon of flour at a time. If too dry, add 1 tablespoon of water to the dough to adjust.) Let the dough rest for 5 minutes.
4. Turn the mixer on again and mix for 3 minutes. When the cycle is completed, turn the dough onto a lightly floured surface and cover with a damp towel. Let it rise for 1½ hours.
