1. Preheat the oven to 350°F. Line two baking sheets with parchment paper and set aside.
2. In the bowl of an electric mixer, beat 1 cup peanut butter with 2/3 cup maple syrup and vanilla until smooth. Beat in the egg until well combined. Add the oats and baking soda and beat on low speed until just combined. Fold in chocolate chips.
3. Using a cookie scoop, drop heaping tablespoon sized portions of dough a few inches apart on the prepared baking sheets. Flatten the top of each scoop of dough with the top of your hand.
4. Bake cookies for 7-8 minutes or until they are set and just start to crack a bit on top. Let cool on cookie sheets for a few minutes before transferring to a wire rack to cool completely.

Remove the dough from the refrigerator (if it is very stiff, you may need to let it sit out for 5 to 10 minutes). With a cookie scoop or spoon, drop the dough into 2-inch balls and arrange on the baking sheet, leaving 1 inch of space around each. With your fingers, gently flatten each cookie to be about 3/4-inch thick.
