Flancocho is a Puerto Rican dessert that combines light cake and a topping of rich cream cheese flan. Everything is rounded out by caramel sauce. Preheat to oven 350 degrees F. Set a kettle of water to boil for a water bath. Grease a large 12-cup Bundt or tube pan and place inside a larger baking pan such as a roasting pan. Set aside.
Place in the oven and cook for 45-60 minutes until the cake is done. Take the flancocho out of the oven and let it cool on the counter. Once it's cooled down a bit, run a butter knife around the edge of the cake pan to loosen the edges on the cake. Carefully turn the cake over onto a flat plate, inverting the cake.
Remove from the refrigerator and run a knife around the sides of the flancocho to loosen it from the pan. Place a large plate over the bundt pan. Turn the pan upside down and wait for the flancocho to slide onto the plate. It should come out very easily as long as you properly greased the bundt pan.
