When baking with einkorn, adjustments must be made to the ratios of flour, water, and yeast. The kneading and proofing times must be reduced, and this creates the need for a custom cycle on your machine.
Since einkorn has a very weak gluten, either too much proofing or too much yeast, can cause the dough to expand beyond the gluten’s capacity to support that rise, resulting in a concave loaf of bread. Preheat off, Knead 10 minutes, Rise 1: 45 minutes, Knead 2: 5 minutes, Rise 2: 30, Rise 3: Off, Bake: 50 minutes.
Our einkorn flours come in two varieties: all-purpose and whole-wheat. Both flavors are freshly milled from the finest einkorn grains available. The difference is in our all-purpose flour, some of the germ is removed. If you are using freshly milled flour straight from the grain mill, you have whole wheat einkorn flour.
