When hot, add the chopped onion and garlic, adding more butter or coconut oil as needed. Cook until starting to soften and then add the chopped tomatoes, salt & pepper to taste. Meanwhile, whisk the eggs and cream together until smooth. Once the vegetables have cooked to your liking, pour over the whisked eggs.
Heat butter in a large frying pan over medium heat. Season the tomato's cut side with salt and pepper. Place the tomato, cut side down, in the frying pan. Crack the eggs straight into the same pan. For eggs sunny side up, leave the eggs to fry on one side. For eggs cooked over easy, flip the eggs after a few minutes and cook for another minute.
For those following a low carb diet, eggs are an excellent food choice. Not only are they low in carbs, but eggs are also one of the most nutritious foods available. In addition to being an excellent source of protein, eggs contain vitamins D, E, A, B, and also iron, selenium, folate, phosphorus, and zinc. Most of the nutrients are in the egg yolk.
Sprinkle eggs and tomato with dried oregano for some extra color and flavor. What to drink? Serve with water and a cup of freshly brewed black coffee or a cup of tea. Feel free to serve the cheese slightly warmed and melted. Just add the cubed cheese to the frying pan just before serving.
