Total Time: 4 hrs 10 minsCuisine: AmericanCalories: 174 per serving1. Set slow cooker to high, cover and set aside. Preheat oven to 400. Grease a sheet pan with Olive oil.
2. Mix all meatball ingredients together in a bowl. Roll into 42 meatballs, about 1.5 oz each. Place on sheet pan and bake 12-15 mins in PREHEATED oven.
3. While the meatballs are baking add the sauce ingredients to the slow cooker, mix well. NOTE- add a dash of onion and garlic powder if desired.
4. Place cooked meatballs in slow cooker , mix, cover. Cook on high for 2-3 hours or low for 8 hours.

Calories: 84 per serving1. Preheat oven to 400 degrees and line grease a broiler pan with oil of choice. I like to line the bottom of my broiler pan with aluminum foil for easy cleanup! If you don't have a broiler pan, simply place a greased cooling rack inside of a baking sheet.
2. In a large mixing bowl, combine the pork rinds, eggs, coconut milk, and seasonings. Allow to sit on the counter 1 or 2 minutes so the pork rinds can soak up some milk. Then, add the meat and mix by hand, being careful not to overmix!
3. Roll meat mixture into 1 1/2 inch meatballs and place on prepared broiler pan. Do not roll the meatballs too tightly or they'll be tough and rubbery!
4. Bake for 18 -20 minutes, or until just cooked through. Crank the oven to broil, and broil 2-3 minutes, or until tops start to caramelize. Set aside.
