4. Place a dry frying pan over low heat, then add the coriander seeds and stir with a wooden spoon until they are fragrant (this should take 1-2 minutes). Tip onto a plate to cool completely, then grind to a powder. If you don't have a spice grinder, place the seeds in a plastic sandwich bag, seal and then bash with a wooden rolling pin until crushed.

4. Add the coconut milk and strained tomatoes (if using) and simmer another 5-10 minutes, or until the lentils are tender. (If the sauce is too thick, add a little more broth or coconut milk, until the desired consistency is reached). Season with salt, pepper, coconut sugar, and lime juice to taste.
