1. Preheat the oven to 170˚C (fan assisted, 180˚C if conventional) and line an 8 x 10 inch baking tin with baking parchment or greaseproof paper.
2. Put the butter, sugar, golden syrup, condensed milk and vanilla in a medium-large saucepan then over low-medium heat, stir until fully melted.
3. Stir in the oats and mix well.
4. Scrape into the prepared baking tin and bake for 22 minutes. Do use an oven thermometer to check it is preheated to the correct amount and don't leave them in too long. Flapjacks continue to cook after removing from the oven.

1. Preheat the oven to 180c conventional oven
2. Grease and line the base and sides of an 8 inch square loose bottomed baking tin with baking parchment. The baking parchment is essential as it makes it easier to lift the flapjacks out of the tin once they have cooled.
3. If you don’t have an 8 inch square tin, use one of a similar volume in size eg 8 x 8 = 64 square inches. I was never good at maths, so I hope you get the idea.
4. Melt the butter, sugar, and syrup in a large pan over a very gentle heat until all the sugar and butter have melted. DO NOT BOIL THE MIXTURE. This is most likely the reason why some flapjacks turn out hard and difficult to eat.
