1. Adjust the oven rack to the middle position and preheat the oven to 350°F. Grease or coat with nonstick spray a 9×5-inch loaf pan.
2. Whisk the flour, baking powder, and cinnamon together in a large bowl.
3. Use a handheld mixer fitted with beater blades, beat the butter and brown sugar together on high speed until smooth, light and creamy. Then on medium speed, add the eggs. Beat in the yogurt, mashed bananas, and vanilla extract on medium speed until combined and smooth. With the mixer running on low speed or spatula, slowly mix the dry ingredients into the wet ingredients until no flour pockets remain. Do not overmix. Fold in the nuts, if using.
4. Pour and scrape batter into the prepared baking pan and bake for 60-65 minutes. Cover the bread with aluminum foil after 30 minutes to help prevent the top from getting too brown. A toothpick inserted in the center of the loaf will come out clean when the bread is done. Remove from the oven and allow pan to cool and then place the bread to cool completely on a wire rack.

1. Move oven rack to middle position and preheat oven to 350 degrees F. Grease 2 8x4-inch bread pans with nonstick cooking spray. (Alternatively, grease a bundt pan or four mini bread pans, about 5 ½ x 3 ½-inch, if using).
2. In a large bowl add cake mix, oil, eggs, bananas, and vanilla. Fold in any optional mix-ins at this time.
3. Split the batter evenly between the two loaf pans (Or the 4 mini bread pans or the bundt pan if using). Smooth batter into an even layer.
4. Bake the two 8x4-inch loaves for 45-50 minutes, or until a toothpick inserted comes out clean. Bake the 4 mini loaves for 20-25 minutes. Bake the bundt pan for 50-60 minutes.
