1. In a small non-stick saucepan, over low-medium heat, melt the butter.
2. Add in golden sugar-free sweetener and heavy cream and whisk constantly and gently with a fork until the sugar-free sweetener has dissolved.
3. Bring to a gentle boil and cook for 6-8 minutes, occasionally stirring with a wooden spoon. No metal spoon! It would cool down the caramel and would split it!
4. Be patient, don't stir too often, the liquid will evaporate, and the caramel will thicken slowly. You know it's ready when the caramel volume has reduced by about a third, and it covers the back of the spoon. Note that the caramel will thicken even more when cooling down, so it's normal if it doesn't look as thick as in my pictures.

2. Put the egg yolks into a medium sized heatproof bowl or measuring cup. While whisking the yolks very slowly pour half of the sauce into the egg yolks. This slowly warms the yolks so they don’t curdle.
3. Now, slowly whisk the yolk mixture and sauce back into the saucepan. Cook over medium low until it is thick enough to coat the back of a spoon. Whisk in the lemon juice.
4. Strain through a fine mesh sieve into a glass jar and store in the fridge.
