Instructions. Remove the membrane from the ribs, and cut off any excess fat. Season each side of the ribs with the barbecue seasoning or seasoning salt. Roll the ribs up, jelly roll style, then place them into your slow cooker. Pour in the root beer, then the water, then pour in the liquid smoke. Set the slow cooker on high for 4 hours.
Place the ribs upright in the slow cooker. I usually set them up in a circular pattern in the slow cooker to maximize the amount of ribs I can fit into it. Place the lid on the slow cooker and cook for 8 hours on low.
Whisk together the barbecue sauce and lemon juice until blended well. Pour the mixture over the ribs. Place the lid on the crock pot and cook on low for 8-9 hours or until the ribs are cooked through and tender. Be sure to baste the ribs every once in while keep them coated on both sides.
Place baby back ribs on top of the onions, and slather them with one cup sugar-free BBQ sauce. Take ribs out of the slow cooker and place onto a baking sheet lined with aluminum foil. Brush the ribs with the remaining cup of BBQ sauce and place under the broiler for about 3-5 minutes, until sauce is bubbling.
Mix the rib rub in a bowl or plastic bag. Then, line your slow cooker with a slow cooker liner, if desired. Using about 5 pounds of thawed St. Louis Style Ribs (or however many will fit upright in your slow cooker), rub the rib rub in a thick layer over both sides of the ribs. You most likely will not use up all of the rib rub.
Pour the Zevia or Chicken Broth into the bottom of the pot. Allow the pressure to release. Drizzle Olive Oil in the pot and brown the ribs (about 3 minutes per side). Add the ribs and Zevia to the slow cooker pot. Cover and cook on High for 3-4 hours (or on Low for 6-8 hours).
