1. Add the milk to a medium sized saucepan and heat over medium-low heat.
2. While the milk is heating, add the egg yolks, sugar, and tapioca flour to a medium-sized glass bowl. Whisk together to combine (mixture will be clumpy) and set aside.
3. Whisk the milk occasionally until it starts to steam - do not boil. Remove the milk from the heat and while whisking, pour a little milk (about 1/2 cup) into the egg mixture - do not stop whisking.
4. Continue to simultaneously whisk and slowly pour the remaining milk into the egg mixture. When all the milk has been poured into the bowl, give the mixture a good stir and then pour it back into the saucepan.

1. In a medium mixing bowl, beat the sugar and the eggs until thickened and pale yellow. Beat in flour and salt. Set aside.
2. Bring the coconut milk to a light boil in a heavy medium saucepan. Slowly beat the hot coconut milk into the egg mixture. Pour the entire mixture back into the saucepan, and place over low heat. Stir constantly until the custard thickens enough to coat the back of a spoon; keep a close eye on it, as it should never come to a boil. When thick enough, the custard should register 170°F on a candy thermometer. Pour the custard through a fine-mesh strainer into a large clean bowl.
3. Allow the custard to cool slightly, then stir in the heavy cream and vanilla.
4. Cover the surface of the custard mixture with a piece of plastic wrap and refrigerate until chilled, at least 4 or up to overnight.
