The old school version is made with beef mince (ground beef) but the flavour of chunky beef pies is better because you can brown the pieces beautifully which forms the flavour base for the sauce.
A typical Aussie Meat Pie contains a minced beef filling, which are fairly quick and economical to make. For something a bit more upmarket, I like to make my pies with chunky pieces of beef which have been slowly simmered in a rich gravy, and this Beef and Guinness Pie is a real treat.
Meat pies. 1 1/2 cup (225g) plain (all-purpose) flour. 100 gram (3 ounces) cold butter, chopped coarsely. 1 egg. 1 tablespoon iced water, approximately. 2 sheets puff pastry. 1 egg, extra, beaten lightly.
