1. Heat oil in a medium-sized sauce pan over medium heat. Add the onions and cook until softened, stirring frequently to keep them from burning or sticking.
2. Add the garlic, stir and cook for one minute. Slowly pour in the bourbon {it will steam up on you}, ketchup, brown sugar, Worcestershire, and chili powder.
3. Bring to a boil and add the cherries.
4. Simmer for 10 to 15 minutes, until slightly thickened and the cherries start to breakdown.

1. Rinse and chop the cherries into quarters. Set aside.

3. Cook uncovered until the sauce thickens, about 13 to 15 minutes. The sauce should be bubbling wildly. Reduce the heat a little, add the bourbon and stir. Cook for another minute or two, and turn off the heat.
4. Let the sauce cool for about 10 minutes before putting it in a food processor or high-speed blender. Blend until smooth.

2. Finish making the sauce. Slowly stir in the pineapple, brown sugar, water, apple cider vinegar, bourbon, tomato paste, molasses, and sweet rub. Increase the heat to high and bring the sauce just to a boil.
3. Simmer and blend. Reduce the heat to medium low and simmer for 25 minutes. Turn off the heat and allow the sauce to cool slightly before transferring to a blender jar. Attach the blender lid tightly and blend the sauce until completely smooth.
4. Use or store. Store the sauce in a lidded jar in the refrigerator. This sauce can be used immediately, but it tastes even better after it has chilled for 24 hours. The sauce lasts up to 2 weeks in the fridge.
