Servings: 4Calories: 699 per serving1. Heat a lug of oil in a frying pan on a medium heat. Put a large saucepan with an inch or two of hot water on a low heat. Put a large heatproof bowl over the saucepan so you have a bain-marie.
2. Add the chopped shallots to the frying pan and cook them gently for around 5 to 10 minutes with a pinch of salt and pepper and the herbs. Once they've softened, but not coloured, add them to the bowl with the cider and all of the cheese.
3. Leave the cheese to slowly melt down, only stirring now and then to help it along. Once it has mostly melted, stir in the crème fraîche then a swig or two of hot water to loosen the mixture a little. Have a taste to check the seasoning, and get all of your dipping ingredients and skewers at the ready. I like homemade croutons, some bread sticks and a few leftover roasted potatoes cut in half for mine, but really anything you like to eat with cheese will be good here. When it's runny and delicious get everyone around the bowl and watch it disappear!

Frequently Asked Questions

Is cheese fondue keto friendly?

This easy keto friendly cheese fondue is a fun party appetizer or main dish meal idea for a special occasion. What I like about this sauce is that it’s only a handful of ingredients and can also be made ahead of time if needed.

What is the difference between single variety and combination cheese fondue?

Indeed, combination-cheese fondues are more common than single-variety: the Valaisan fondue, on the extremely comprehensive Cheeses from Switzerland site calls for raclette and emmental; both cheeses melt extremely well, but lack the savoury, umami notes of gruyère, which is the mainstay of other recipes.

What to serve with cheese fondue?

Cheese fondue is usually served with cubes of bread, boiled potatoes, charcuterie and cornichons or other pickles, alongside white wine, kirsch or hot tea to l essen its leaden effect on the stomach. Can you have cheese on a low carb diet?

If you’re not sensitive to dairy, cheese has a given place in the low-carb kitchen. It makes low carb more simple, and more pleasurable. Cream cheese is great for thickening sauces where you would traditionally use flour. Baked cheese chips is a flavorful and crispy snack that’s way better for you than traditional potato chips.
