My keto friendly version of Chex Mix is great for parties, just like the original. It’s also a fantastic low carb snack because it’s super easy to take along to work, on a road trip, or wherever you’re headed.
Melt the butter in a small pan and let it cook until golden brown. This will give the caramel deeper flavor. Pour in heavy cream and stir until combined. Lower the heat and simmer for a minute. Add in sweetener of choice, we used erythritol. Let that dissolve for a minute. Add a pinch of salt as well.
Then divide the Chex caramel mix between the two baking sheets. Sprinkle the M&Ms over the top and let the Chex mix with caramel cool to room temperature.
