If you want to reduce the sugar to make a low sugar pineapple jam, you’ll have to add low sugar pectin (like sure jell low sugar) to get the jam to set. Regardless of the method you use, the process starts with crushed pineapple.
Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling. Peel and core pineapples. Finely chop or grind fruit.
(Note that if you choose to make pineapple jam with liquid pectin, you’ll need even more sugar. Liquid pectin requires 4 cups of sugar to 3 cups of pineapple. For liquid pectin, the sugar is added at the beginning and the pectin at the end, which is opposite of the order when using a powdered pectin.)
Keep the jars hot. Take the can of crushed pineapple and dump it into a 4 cup measuring cup. Add enough pineapple juice to equal a total of 3 1/4 cups. Place the pineapple/juice mixture into a pot with the butter and the pectin. Bring this to a full boil, then add the sugar all at once. Mix to help dissolve the sugar.
