1. Line a baking sheet with parchment paper and set aside.
2. In a saucepan, melt the butter over medium heat. Once the butter has melted, gradually stir in the granulated erythritol. Cook for 8-10 minutes stirring occasionally.
3. Remove from heat and stir in the vanilla and pecans. Transfer the mixture to the baking sheet and use a rubber spatula to spread the mixture in an even layer
4. Let cool at room temperature and then transfer to the refrigerator for 1 hour before cutting into pieces and serving.

1. Heat a 10″ skillet over medium heat. Put the raw nuts in the skillet and the dry seasonings. Stir and heat until the pecans are warm and aromatic.
2. Add in the butter, cut in chunks and stir in until melted. Use a spatula to combine everything so the pecans are all coated in butter.
3. Add in the sweetener and mix in. Cook, stirring frequently until the caramel begins to bubble. The butter and sweetener will create a foamy, golden bubble, about 6- 8 minutes. If using a granular vs a liquid sweetener this step might take a little longer. Watch out for the golden bubble.
4. Stir in the vanilla extract and bring the heat up to medium-high, stirring often until you see toasty bits on the pecans and the caramel sauce is a deep golden brown and getting sticky.

2. In a large microwave safe bowl, combine sugar and syrup. Microwave on high for 3 minutes. Mix well and add pecans. Microwave another 3 minutes. Remove carefully and stir well.
3. Add butter and vanilla and stir well. Microwave once more for one minute and mixture should be boiling a little. Carefully remove and add baking soda. Mix well and be sure to notice that mixture should foam up a bit and change color.Pour onto the silicone or foil lined pan and spread with the sprayed spatula.
4. Set aside and allow to cool until it hardens. Break into pieces and store in an airtight container. Enjoy!
