1. Rinse fermented black beans with tap water, drain, and coarsely chop them. I like to leave some bigger pieces of the beans, to give the sauce more texture.
2. (Optional) You can use a food processor to mince all the ingredients. Add black beans, onion, and garlic into a food processor. Blend until both ingredients are minced, but not a fine paste.
3. Heat oil and dried chili peppers in a saucepan over medium heat until warm. Turn to medium low heat. Cook until the chili peppers turn dark, but not black. Stir occasionally. Scoop out the chili peppers and discard them.
4. Add the black beans and onion. Cook and stir, until the sauce looks a bit dry. (The beans will absorb oil at first, but release the oil once they’re cooked.)

5 hours ago 1 cup (227 g) of dried fermented black beans 1⁄3 cup (79 ml) of vegetable oil 1/4 white onion, minced 4 to 6 dried chili peppers, roughly …

Rating: 100%(3)
1. Soak 1 C (227 g) of dried fermented black beans in water for 10 minutes. Open a package of dried fermented black beans and pour 1 cup (227 g) of them into a bowl. Add enough water to submerge the beans and set them aside for 10 minutes to soak. Soaking the beans makes them easier to chop and it rinses off some of the beans' salt. You can buy dried fermented black beans at your neighborhood Asian market or online. Fermenting the beans gives them their unique flavor that's full of umami. Fermented black beans are also saltier than standard dried black beans.
2. Drain the beans and roughly chop them on a cutting board. Set a fine-mesh strainer or colander into the sink and pour the soaked beans into it. Then, put the beans onto a cutting board and chop them until they're slightly chunky. If you'd like a smoother sauce, keep chopping until the beans are finely chopped. Set the beans aside. To save a little time, you can put the beans into a food processor along with 1/4 of an onion and 8 to 10 cloves of peeled garlic. Then, pulse the ingredients until they're roughly chopped.
3. Infuse oil with dried chili peppers over medium heat. Set a heavy saucepan on the stove and pour in ⁄3 cup (79 ml) of vegetable oil. Add 4 to 6 roughly chopped dried chili peppers and turn the burner to medium. Once the oil shimmers, turn the burner down to medium-low and heat the chilies until they darken. Then, carefully scoop out the chilies with a slotted spoon and throw them away. Use Korean or Mexican dried chili peppers to give the sauce mild flavor or cook Chinese or Thai chili peppers if you'd like the sauce to be spicy. For really spicy black bean sauce, add 2 teaspoons (6 g) of whole Sichuan peppercorns along with the dried chilies.
4. Mince 1/4 of an onion and add it to the skillet along with the beans. Cut a 1/4 of an onion into fine pieces and put it into the hot oil in the saucepan. Then, add the drained black beans and stir the mixture. If you chopped the beans with the onion and garlic in a food processor, just add all of them to the oil at this point.

Rating: 4/5(1)
1. Put all ingredients (except salt) in high-powered blender (like a VitaMix) or food processor and process until totally smooth. I do not recommend using a normal blender, because mixture will be very thick and really hard to process.
2. Line an 8"x4" loaf pan with saran wrap, or place saran wrap on a plate, and transfer fudge mixture to pan, pressing down firmly. If forming on a plate, form a rectangle and smooth edges as much as possible. Sprinkle with a little bit of coarsely ground sea salt. Place in the refrigerator, and let set for at least 1 hour, or until totally firm. Slice into 24 squares (approx 1" squares), and serve!
3. Store in the refrigerator for up to 5-6 days (but it won't last that long!). For longer storage, cut fudge squares can be frozen, and defrosted in the refrigerator or at room temperature until thawed. DO NOT microwave the frozen fudge to defrost it unless you want fudge sauce; the oil will melt!

Season with chili powder, cumin, garlic powder, cayenne pepper, salt, and black pepper.

Add the onions, red pepper flakes, ¼ teaspoon salt, couple cracks of pepper, and cook for 5 minutes. Add the garlic and cook for 2 minutes then add the black beans and chicken stock. Cook for 10-15 minutes, adding more stock if the beans look dry. Add the chopped spinach, amino acid, sesame oil, bell peppers, mix well and check for seasoning. Flip and cook 3 minutes more and remove from oven and transfer to a clean platter to rest.
