There is a variety of sand tart cookie recipes available, and some recipes are for drop sand tarts. But we always made cut-out sand tarts. It's so much fun using Christmas cookie cutters and cutting cookies into cute shapes. Some sand tart recipes, however, are hard to handle.
SAND TARTS 1 lb butter 3 eggs 4 cups brown sugar 4 ½ cups flour (4 3/4 cups if using extra large eggs) Cream butter and sugar. Add eggs and beat. Fold in flour on slow speed of mixer. Dough will be very thick.
Brush the top of each cookie with egg wash, and sprinkle with cinnamon sugar mixture or Christmas sprinkles. Bake for 8 - 10 minutes. Baking them longer will create a more crisp cookie, but you don't want them too dark either. I prefer most of my cookies soft and chewy, but Amish sand tart cookies are the best when they are thin and crunchy.
If you use a simple round cookie cutter, you'll notice that they look just like sand dollars, which is how they supposedly got their name. While sand tarts are as easy as sugar cookies, there is one trick that sets them apart. The key to a great sand tart is to roll the cold dough very thin, right around 1/8-inch thick.
