1. Cut the cauliflower into florettes and add them to a microwave safe bowl. Add 2 tablespoons of water and cover with cling film. Microwave for 5-8 minutes, depending on your microwave, until completely cooked and tender. Drain the excess water and let sit uncovered for a minute or two. (Alternately, steam your cauliflower the conventional way. You may need to squeeze a little water out of the cauliflower after cooking.)
2. Add the cauliflower to a food processor and process until fluffy. Add the butter, garlic powder, and sour cream and process until it resembles the consistency of mashes potatoes. Remove the mashed cauliflower to a bowl and add most of the chives, saving some to add to the top later. Add half of the cheddar cheese and mix by hand. Season with salt and pepper.
3. Top the loaded cauliflower with the remaining cheese, remaining chives and bacon. Put back into the microwave to melt the cheese or place the cauliflower under the broiler for a few minutes.

1. Cook the cauliflower according to package instructions or steam until tender. Set aside.
2. Over medium heat, melt butter in a medium saucepan. Add onions, diced turnips and celery. Season with garlic powder and salt and saute over medium heat until onions are translucent and turnips begin to pick up a little golden brown color and begin to soften, about 7-10 minutes. Add the cauliflower and continue to cook for another 2-3 minutes.
3. Add chicken stock to the vegetables and bring to a boil and lower the heat to simmer for 5-7 minutes or until turnips are fork tender.
4. Carefully pour the vegetable and stock mixture into the blender. Add cream and sour cream and blend on high until smooth and creamy. This is done best in a high powered blender but a traditional blender or immersion blender would work well as well, although the texture may not be as smooth. Use caution when blending hot liquids and cover the top of the blender with a towel. Use additional broth if you would like a thinner soup!

1. Preheat the oven to 425°F (220°C). Line a baking pan with parchment paper. Halve the zucchini lengthwise. Use a small metal spoon to scrape out the seeds from each zucchini half, then cut each half into three pieces, 1-1/2 to 2 inches long. Place the zucchini, skin side down, in one layer on the prepared baking sheet. Generously brush the zucchini with the olive oil.
2. In a small bowl, mix together the smoked paprika and cumin with 3/4 teaspoon salt and 1/4 teaspoon pepper. Season the insides of the zucchini with the spice mixture. Roast the zucchini until just tender but still firm when pierced with the tip of a paring knife, 12 to 15 minutes. Reduce heat to 350°F (175°C).
3. Divide the cheese and bacon evenly among the zucchini bites, packing the cheese in a bit so it isn’t falling out. Return the zucchini to oven and bake until the cheese is bubbly and the zucchini is tender, 6 to 8 minutes.
4. Garnish with the sour cream, scallion greens, diced tomato, and cracked pepper. Serve immediately.
