1. Trim the Flank Steak (1 pound) of any excess fat or silver skin. I like to leave some fat on the meat, it helps it tenderize plus it'll melt on the grill anyways.
2. In a food processor, pulse the Fresh Cilantro (1 handful), Ground Cumin (1 teaspoon), and Ground Black Pepper (1/2 teaspoon). Slowly drizzle in a teaspoon or two of Olive Oil (to taste) until a paste forms.
3. Rub all over the meat and place into a zip lock bag with the Garlic (2 clove) and the juice of a Lime (1). I like to toss in my lime peels for more flavor.
4. Let that hang out in the fridge for at least three hours. The more, the better!

Frequently Asked Questions

How many carbs in carne asada steak?

Carne asada is incredibly low in carbs. In my recipe, each 5 oz portion of steak + marinade has just 2 grams of carbs. The full nutrition stats can be found in the recipe card below, but here are the highlights: Is Carne Asada Keto?

What kind of meat do you use for carne asada?

Since carne asada consists of a well-marinated beef steak, you can use tougher steaks that notoriously dry out quickly without worrying about them becoming too tough or dry. While flank steak or skirt steak are the traditional picks for carne asada, you can also use sirloin steak, tenderloin steak, rib steak - or even brisket!

How to grill flank steak on a low carb diet?

Spray with cooking spray or add a bit of oil. Shake off the excess marinade and cook the steak for about 5-7 minutes on each side. Let it rest for 10 minutes before cutting against the grain. I have so many low carb side dishes on this blog but here are a few that would go very nicely with the grilled flank steak.

What is the best way to marinate steak for carne asada?

If you buy a large amount of flank steak or skirt steak for carne asada, you can whip up a gigantic batch of marinade (I use my vitamix blender since it holds so much), and place each steak in a gallon sized ziploc bag that i fill up with marinade.
