1. Place the rice in a large sieve, with a fine-grade mesh. Set the sieve over a bowl in the sink. Rinse the rice with cold water, dunking the sieve down into the water, and shaking gently. Then dump out the starchy water and repeat with clean water. Wash and rinse the rice FIVE times to remove all excess starch. The water should be pretty clear on the last wash. Try not to handle the rice too much, as it might break the long grains into pieces.
2. Dump the rice into the bowl. Add luke warm water and 2-4 tablespoons salt. Add 2 tablespoons at first. Then taste the water. It should taste like sea water. If it doesn’t add more salt.
3. Let the rice soak in the saltwater for 2 hours.
4. Carefully drain the rice, pouring the rice and water back through the sieve.

1. If you don’t have pre-made cauliflower rice, start with that. Cut the cauliflower head into small florets (try to make them even sized for even “ricing”). Place about half in your food processor fitted with the S blade and pulse a few times until it resembles corse “rice” grains. Set aside in a bowl and repeat with remaining florets. Don’t overcrowd the food processor otherwise, the rice grains won’t be even - some will be very small and others will be large chunks.
2. In a small bowl, combine all the spices (garam masala, turmeric, cumin, sweet paprika, cinnamon and cayenne) together
3. In a medium bowl, mix chicken pieces with 1 tbsp olive oil, lemon juice, spices, and salt until it’s well coated. It might seem like there are too many spices but keep in mind that they will also flavor the cauliflower rice.
4. If you have time, cover the chicken and marinate in the fridge anywhere from 30 minutes to overnight. If you don’t, you can skip the marinade and it will still be delicious.

1. Place the rice in medium bowl and add enough water to cover by 2 inches. Using your hands, gently swish the grains to release any excess starch. Carefully pour off the water, leaving the rice in the bowl. Repeat four times, or until the water runs almost clear. Using a fine mesh strainer, drain the rice.
2. In a medium pot, bring the water, butter, salt, and rice to a boil. Cover the pot with a tight fitting lid, then turn the heat down to a simmer and cook for 15 to 20 minutes, until all of the water is absorbed and the rice is tender. If the rice is still too firm, add a few more tablespoons of water and continue cooking for a few minutes more. Remove the pan from the heat and allow it to sit covered for 5 minutes. Fluff the rice with a fork and serve.
3. Freezer-Friendly Instructions: This rice can be frozen in an airtight container for up to 3 months. (Putting it in a flat layer in sealable plastic bags works well as it will take up less space in the freezer.) No need to thaw before reheating; remove it from the freezer and reheat in the microwave with 1 to 2 Tbsp. of water.
