The key to making sure this is a low carb meal is to use low sugar or keto friendly sauces. We like to use chicken or beef broth to cook the ribs in to make them tender. Usually apple juice is a popular method, but for the low carb version, just use broth. Use different sugar free or keto friendly bbq sauces, marinades or glazes.
If you want to try this in the oven, rub the short ribs with the bbq seasoning and place in a baking dish. Cover with aluminum foil and bake for 3 hours in a 300 °F oven. Take off the foil for the last 1/2 hour. I’ve made a low carb bbq sauce for lots of my recipes.
Place the rack of ribs into a slow cooker and pour the BBQ sauce all over. Put the slow cooker on low and cook for 8 hours, or on high for 4 hours. Once cooked, preheat the oven to 210C/410F.
For a great BBQ rib style, I prefer baked pork ribs. Baby back ribs are my favorite because they are a little leaner and have more meat than St. Louis Style. And because they are cooked low and slow, oven baked baby back ribs come out tender and juicy. They typically cost a little more, but my grocery store has them frequently on sale.
