Birria tacos are made with goat meat that is marinated in a dried chile pepper paste, then braised until tender. The stewed meat is then fried, and the cooking liquid is reduced to a sauce.
Chunks of meat are stewed in a flavorful broth with spices. Dipping the corn tortillas in the spiced cooking liquid before pan-frying them gives the tacos their signature deep red color. Birria de res is a tender meat stew packed with chili flavor served on its own, or chopped and piled onto doubled up corn tortillas (tacos de birria).
Birria tacos are usually served with a spicy sauce, onions, cilantro, and lime. The sauce is made with a variety of chili peppers, including guajillo, ancho, and pasilla peppers. This gives the sauce a unique flavor that is both spicy and slightly sweet.
Although Birria is delicious, the traditional preparation takes some time. The traditional way to make birria is to let it cook in a large pot for 2-3 hours at least, checking it often to make sure it was cooked correctly. Fortunately, the tecnology that we have today helps us so that we can make it more quickly without sacrificing flavor!
