3. Begin by filling the wonton wrapper with about a tablespoons worth of pork filling. Wet your finger, and run along the edges of the wonton wrapper. This will help to seal it closed.
4. If your wrapper is round, fold the wrapper over the filling to create a half-moon shape, pinching the edges to seal. If you wrapper is square, scroll up to view the step by step images of how I fold my dumplings into a little purse dumpling.

2. Combine the shredded cabbage and water chestnuts in a colander with 2 teaspoons of salt and place it over a bowl. Leave it to stand for about 30 minutes to allow the salt to extract the moisture from the cabbage and water chestnuts.
3. Split the dough in half. Roll one half of the dough on a floured surface until it is thin, about 1/16th of an inch thick. Cut the dough into rounds (mine were 3 ½ inches in diameter).
4. Combine all the sauce ingredients in a small bowl. The sauce will build more flavor the longer it sits. Dip the cooked dumplings in the bowl of sauce and enjoy!
