Add the 3/4 cup warm water to the flour mixture, stirring until combined. Cover with plastic wrap and let stand at room temperature for 8 to 24 hours (surface of mixture should be bubbly).
3. Add the 1 cup warm water to the flour mixture and stir until combined. In a large bowl stir together 3 cups of the bread flour, the salt, and the 1/2 teaspoon yeast; pour the water-flour mixture into the dry flour mixture. Using a wooden spoon, stir until combined.
4. Turn dough out onto a well floured surface. Knead dough only a couple of strokes (dough will be very sticky). Cover; let rest 20 minutes.
